Vegiful Spaghetti and Meatballs in the slow cooker…
Meatballs:
500gm beef mince
1 med. grated zucchini
1 med. grated carrot
3 heaped Tbs uncooked rice
1 egg
1 tsp garlic powder
1 tsp mixed herbs
1 tsp salt
Sauce:
1 tin crushed tomatoes
1 tin condensed tomato soup
1 small onion very finely diced
1/4 cup bbq sauce
2 level tsp English or American Mustard
1 Tbs Worcestershire sauce
2 tsp powdered beef stock
1 tsp garlic powder
Small handful of fresh basil or 1 tsp of dried herb of choice.
Method:
Mix together meatballs ingredients in a bowl with your hands very well until the protein of the meat changes and goes more paste like.
Roll into balls and place in slow cooker.
Mix sauce ingredients you use for your meatballs and pour over meatballs.
Cook on high 4 hours, low for 6.
Resist stirring meatballs until 1/2 hour before serving.
Serve with favourite pasta.
