What You Need

2 kg chicken drumsticks (about 12 pieces)

1 tsp cracked black pepper

1 tsp onion powder

2 tsp smoked paprika

300 ml cooking cream

1 tbsp minced garlic

1 tbsp cornflour
-
150 g semi-dried tomatoes

60 g baby spinach leaves
-
1/2 cup grated fresh Parmesan cheese
How to Make Tomato Spinach Chicken Drumsticks
- Put chicken drumsticks in the slow cooker.
- Sprinkle pepper, onion powder, and paprika on top.
- Use a stick blender or food mixer to blend cooking cream, garlic, cornflour, and semi-dried tomatoes until smooth. Pour this mix over the chicken.
- Cover with a tea towel trick and cook on Auto for 4 hours or Low for 5-6 hours.
- Take chicken out gently to a bowl or tray. Stir sauce hard with a plastic whisk. Add spinach and cheese. Stir again 🙂
- Put chicken back in slow cooker. Coat it well with sauce. Cook 30 more minutes on Low.
Extra Tips

Use fewer drumsticks (1 kg) if you want, but keep other amounts the same.

Pick cooking cream so it stays smooth after long cooking.

I ate mine on creamy mashed potatoes with Sweet Chilli Butter Broccoli on the side.
