1 kg beef short ribs

Marinade:

2 tbsp apple cider vinegar

1 tsp dried rosemary

1 tsp dried thyme

1/2 cup BBQ sauce

1 tbsp tomato paste

1 tbsp smoked paprika

1 tbsp garlic powder (fresh garlic works too)

1 tbsp onion powder
-
2 tbsp blackstrap molasses (honey, maple syrup, or brown sugar are okay, but molasses is best)

1 cup beef stock

Pepper to taste

Sweet Sticky BBQ Beef Ribs: Directions

Mix all marinade ingredients (skip the beef stock) in a bowl until smooth.

Rub half the marinade on the ribs. Save the rest in the fridge for later.

Pour beef stock into the slow cooker. Add the ribs.

Cook on low for 3 hours. Flip ribs gently, then brush on the saved marinade (check notes).

If ribs look dry, spoon sauce from the bottom over the top—it makes them tastier!

Keep cooking on low for 6-7 hours total. Or do 5 hours low + 1 hour high (that’s my favorite for ribs).
Notes
Skip flipping halfway? Brush marinade at the end and bake in a hot oven (200°C) for 10 mins. It gets extra sticky and sweet!
