Ingredients

  • 1 kg chicken, any pieces you like

  • 500 g small potatoes, chopped into fourths

  • 2 carrots, cut into sticks

  • 1 leek, chopped thin

  • 100 g fresh green beans

  • 2 bay leaves

  • 6 thyme sprigs (pull off leaves, toss stems)

  • 3 garlic cloves

  • 1/2 cup cream

  • 1 cup chicken stock

  • 2 tablespoons cornflour

  • Pinch of cracked pepper

One Pot Chicken Dinner: Instructions

  1. Put potatoes, carrots, leek, garlic, thyme leaves, and bay leaves in the slow cooker.

  2. Mix cream and cornflour in a bowl until smooth.

  3. Pour the cream mix and chicken stock over the veggies.

  4. Add chicken pieces on top. Sprinkle with pepper.

  5. Cook on low for 6-7 hours (like in a Contempo 5.5L slow cooker).

  6. Add green beans in the last hour.

Notes

  • We’ve tried breast, thighs, cutlets, or legs—any work great.

  • Chop garlic any way: whole, sliced, or tiny bits.

  • Use lactose-free cream if needed.

  • Toss in cubed butternut squash with the beans sometimes.
