Hearty Thick Beef Stew. Warm up with this super yummy, chunky beef stew made in one pot! Tender beef, crispy bacon bits, soft potatoes, carrots, and tomatoes simmer slow for big flavor. Toss in pasta and green broccolini at the end. Perfect cozy dinner for 6—pair with bread or eat alone. Family fave!

Ingredients

  • 700 grams cubed gravy beef

  • 8 slices chopped shortcut bacon

  • 4 medium chopped potatoes

  • 2 carrots cut in thick slices

  • 1 1/2 teaspoons onion powder

  • 3 tablespoons crushed garlic

  • 1/4 cup gravy powder

  • 2 teaspoons beef stock powder

  • 2 tins crushed tomatoes

  • 2 tablespoons Worcestershire sauce

  • Freshly ground black pepper

  • Broccolini (add in last 1/2 hour)

  • 250 grams raw soup pasta (like risoni or any small pasta)

Hearty Thick Beef Stew: Directions

  1. Brown the cubed beef and chopped bacon if you like (your choice!).

  2. Put all ingredients in the slow cooker, except broccolini and pasta.

  3. Stir everything together well.

  4. Cook on high for 2 hours, then low for 3 1/2 hours.

  5. Add pasta and broccolini.

  6. Cook on low for another 1/2 hour, or until pasta is soft like you want.

Notes

  • Use any veggies you have—these are what I used that day.

  • Eat with crunchy rolls or just by itself.

  • If it gets too thick, stir in a bit of hot water.

  • Made in Breville 7L slow cooker.
