Ingredients

  • Roast beef, 1–2 kg

  • 1 onion, diced

  • 2 heaped tablespoons tomato paste

  • 250 g fruit chutney (Rosella recommended)

  • 2 tablespoons dry gravy powder

Lush Roast Beef and Gravy: Directions

  1. Put the diced onion in the slow cooker bowl and place the roast beef on top.

  2. Mix the tomato paste, chutney, and gravy powder together until even.

  3. Spread the mixture over the top of the beef so it is well coated.

  4. Cook on Low: about 6 hours for 1 kg, or 8 hours for 2 kg, or until the beef is done to how you like it.

  5. When cooked, remove the roast and let it rest while you thicken the sauce.

  6. Thicken the cooking juices by using the slow cooker’s sear/high setting briefly or simmer on the stovetop for about 5 minutes until the gravy thickens.

  7. Slice the beef (an electric knife works well), place on a serving plate, and pour the rich gravy over the slices. Serve with vegetables.
