Ingredients
For the Steak:
- 1 packet dry French onion soup mix
- 1/2 cup beef stock
- 2–3 onions, cut into slices about 1–2 cm thick
- 3 rump or scotch fillet steaks (or a lean, heart-smart cut)
For the Gravy:
- 1 tomato
- Salt and pepper, to taste
- A few drops of Worcestershire sauce
- Butter
French Onion Steak: Instructions
- Start with the onions. Lay the sliced onions across the bottom of your slow cooker bowl. Pour in a good splash of the beef stock so the onions have some moisture to cook in.
- Sear the steak. Season your steaks with salt and pepper, then place them in a hot frying pan. Cook briefly on each side just until you get a nice brown crust — you’re not cooking them all the way through yet, just sealing in the flavor.
- Coat with soup mix. Take the steaks out of the pan and generously coat both sides with the dry French onion soup mix. Make sure every part is well covered.
- Layer everything in the slow cooker. Place the coated steaks on top of the onions in the slow cooker. Add a small knob of butter on either side of the steaks, then lay the sliced tomato right on top of the meat.
- Cook low and slow. Cover and cook on high for 1 hour, then switch to low and continue cooking for another 3 to 4 hours, until the steak is tender.
- Make the gravy. Remove the steaks from the slow cooker and set them aside. Turn the slow cooker back up to high and let the remaining liquid thicken into a gravy. For extra flavor, stir in a few drops of Worcestershire sauce if you like.
- Plate it up. Serve the steak alongside mashed potatoes or a potato bake, plus your favorite vegetables or corn on the cob.
- Finish with gravy. Pour the warm gravy generously over the steak and sides.
