Doing a twist to my kids favourite vegetable dish, cheesy potato smash (whoever came up with it is a genius by the way)
I call it Cheesy Chicken Potato Smash
Ingredients:
1kg chicken thighs diced
Potatoes skin on diced (enough to cover the bottom of slow cooker tightly packed)
1/2 onion diced (kids don’t like a lot of onion)
Diced bacon pieces
Minced garlic (approx 1 clove)
Mixed herb
Grated cheese
Paprika
Method:
Mixed the potatoes chicken garlic onion and bacon in slow cooker. Sprinkle with mixed herbs. Cook on HIGH for 4 hours. About 30-45 mins before the end if cooking time sprinkle grated cheese and paprika over the top. Let it melt and brown up. Things i will do differently is firstly leave the butter out and secondly cut the potatoes in larger chunks/ wedges.
Definitely a success.
