Ingredients

  • 8 eggs

  • 1 cup cooked chicken, chopped small

  • 1 can (300g) creamed corn

  • 1 small can (125g) corn kernels, drained super well

  • A pinch (5g) fresh chives, snipped up

Chicken & Corn Mini Quiches: Instructions

  1. Crack eggs into a big bowl and whisk them until smooth and bubbly.

  2. Toss in the chicken, creamed corn, corn kernels, and chives. Stir everything together nicely.

  3. Scoop the mix into 16 silicone mini muffin cups, filling them up.

  4. Put them in your slow cooker on HIGH. Add a tea towel trick to catch steam. Cook about 1 hour 15 minutes until set.

  5. Let cool a bit before eating!

Helpful Tips

I made these in my 7L searing slow cooker. For a regular ceramic one, place cups in 1cm of water so they don’t dry out.
Small cooker? Cook in two batches.
Try one big quiche in a silicone pie pan or right on baking paper in the cooker—watch it closely, as it might take longer to firm up.
Yummy for quick bites, school lunches, or meals with salad on hot days. Super way to use leftover chicken!
