Chinese Chicken & Cashew Nut
(Served with rice and stir fried veg).
Ingredients:
– 4 chicken breasts cut into 1 inch cubes (would normally use 1kg of Chicken thighs but I needed to use these up)
– 1/4 cup soy sauce
– 1/2 teaspoon minced ginger
– 2 table spoons tomato sauce
– 1 cup chicken stock
– 1/4 cup brown sugar
– 2 table spoons rice wine vinegar
– 1 teaspoon minced garlic
– 2 table spoons olive oil
– 1/4 cup cornflour
– 1 cup unsalted cashew nuts
– 1/2 cup chopped spring onions
Directions:
Put chicken pieces into a zip lock bag and coat evenly with cornflour. Put all other ingredients into slow cooker (except spring onions and cashew nuts) and stir to combine. Put chicken in and coat with sauce mixture. Cook on low for 4-6 hours (depending on your slow cooker and what chicken cut you use). Stir through cashew nuts and Spring onions a few minutes before serving. Nice with steamed rice and stir fried veg.

Slow Cooker Chicken korma. Making a homemade curry and I will never purchase a takeaway curry again.
Approx 8-10 potions made in my 3.5l slow cooker for around 80p per portion.
Ingredients:
600g diced chicken lightly fried off
2 jars korma cooking sauce
1 large white onion diced
1 punnet of mushrooms diced
1 tin of peas
Directions:
All into the slow cooker together. I cooked on low for 4 hours and then high for 2 hours and the chicken just fell apart.
You can use this recipe for any curry just change the sauce to what you would prefer.
Update: yes I understand I used a jar of sauce but everyone has to remember everyone has different preferences and their own reasons for using what they have.
