CrockPot Beef Stew

CrockPot Beef Stew. Before and after. DELICIOUS!!! Here is the recipe. My apologies for not adding. 2# beef stew meat. Combine 2c flour, salt, pepper and thyme. Mix to your liking. Coat the beef with mixture. Sauté/brown in veg oil in pan. No need to cook thru. Remove from pan. In pan add 16oz beef broth. Bring to a boil. Add small can of tomato paste to thicken broth. Put potato chunks, carrots, onions and celery in CP. Top with beef. Then add broth. Mix. If not enough broth, I added a brown gravy mixture or you can add more broth. Cook low and slow for 6-8 hours. YUMMY!!!

Lentil shepherds pie/hotpot. I’m the only one who doesn’t eat meat but this is always a big hit with the whole family.

Frozen veg base mix
2 tins green lentils
1 tin tomato soup
Few leftover baked beans from the fridge
Tomato puree
Lamb stock cube (you could use veggie)
Bisto & hot water to top it up
Garlic
Dried rosemary
Big dollop mint sauce
Henderson’s/Worcester sauce
Balsamic vinegar
Black pepper

Will leave it on low all day & top with either mashed or thinly sliced potatoes (haven’t decided yet!).

Rich & Smoky Bourbon Beef. “
Bourbon goes well with beef and adds a different flavour. It’s rich and smoky.

Ingredients:

2oz Flour
750g cubed beef
200g thick smoked pancetta
1 red onion
1 red pepper
2 garlic cloves
Tin chopped tomatoes
1 tbsp sun dried tomato paste
300ml Bourbon
1 tsp Thyme
1/2 tsp Rosemary
2tsp Marjoram
1/2tsp Cayenne Pepper
2tbsp Smoked Paprika
1tsp cumin
2tbsp honey
2 bay leaves
1 beef stock pot
Salt & Pepper.

Directions:

Cover beef in seasoned flour and sauté then add the onions and pancetta cook till onions soften. Add the rest of the ingredients and bring to the boil. Place in pre heated sc on high for an hour , low for about 6 hours .

I added an extra tbsp of honey, used only 200ml of Bourbon but made it up to 300ml with water.

Check seasoning .

Serve with buttery mash and green beans.

UPDATE For corned beef hash I put one tin of corned beef chopped into small pieces, one onion chopped fine, around five or six potatoes cut into chunks, one carrot cut into chunks (optional), water (enough to almost cover the ingredients), three Oxo cubes (beef stock cubes) and some white pepper. Leave on low. Served with mushy peas, beetroot and crusty bread….. yummy.

My son was home from university and after pots and pans as he didn’t have enough. Suddenly he screams! I thought he had found a rodent in the cupboard so I go running in. He stands up and is holding an old slow cooker which he proceeded to raise up like something out of the lion king. “Oh my word, can I have this?”. Apparently, it’s the most fabulous thing. He now has corned beef hash cooking nicely. Who would have thought a slow cooker could have brought such happiness to a 19 year old. Haha

Cheesy Tator Tot casserole

1 pound of ground beef
32 ounce pkg tator tots
2 cloves garlic minced
10.5oz chedder cheese soup
2 cups shredded cheese
Brown your beef & garlic & drain. Large bowl mix all ingredients except one cup of cheese. Poor in lightly greased crock pot. Top all your ingredients with your remaining cheese. Cover and cook on low for 4 to 5 hours or on low for 1/2 hours.

Chicken curry

Ingredients:
2 chicken breasts, (chopped into bite size pieces).
1 teaspoon of cumin
1 teaspoon of turmeric
Half a teaspoon of chilli powder
1 teaspoon of paprika
1 teaspoon of coriander
Half a tin of chopped or plum tomatoes
1 teaspoon of ginger
1 large white onion
2 garlic cloves
1 can of coconut milk/cream
Salt and pepper
1 tablespoon of flour to thicken the sauce
1 teaspoon of Garam masala

Directions:

Add the chicken and salt and pepper to the slow cooker…Fry the onion and garlic in a little oil about 5 minutes.
Add all the spices in with the garlic and onion for about a minute, then spoon it into the slow cooker. Add the table spoon of flour, coconut milk and tinned tomatoes mix well, cover and cook on high for 4 to 6 hours, or low 8 to 10 depending on how fast your sc cooks.

Chicken kebab.
2 breasts slice in half lengthways then half again.
Whole pot of natural yoghurt, add paprika, garlic granules, mixed herbs (I also threw in some fresh parsley).
Pour mix over the chicken and leave to marinade, overnight is ideal.
Slow cook on low (roughly 5 hours, more or less depending if you want dry or juicy chicken but make sure it is cooked)
Serve diced up with pitta bread (we went for wraps) with some salad, sauce and sides.
Absolutely delicious.
