Slow Cooker Carribean beef and potato curry

Day two of poorlyville and comfort food. Carribean beef and potato curry. Coconut rice and beans. Was a success 

Ingredients:
1 onion chopped
4-5 tbsps of curry powder
2 tsps of thyme (I used dried)
1 green medium chilli (seeded)
Salt & Pepper
Tbsp of boullion powder
2-3 tsp of lazy garlic
Large tray of stewing beef

Directions:
All mixed together last night. Left in fridge to marinade.

This morning I browned the marinaded meat off then added 4 cups of boiling water. Tbsp of tomato paste. Added 5 medium potatoes 🥔 peeled and cut into 4.

All in slow cooker for 6 hours on low. (Here I added a tbsp I’d sugar) After the 6 hours I left on warm until I was ready for it.

Rice.
Half a pack of basmati in slow cooker. Tin of kidney beans, tin of coconut milk. Then refilled tin with water and added that. Some more thyme. Paprika (for colour) mixed together and popped rice cooker on.. 20 mins later delicious perfect rice. (Was a total experiment for me too)

Next Fakeaway kebab Recipe

I jumped on the Fakeaway kebab train tonight.. was a 100% hit with my family and friends  I will def be making again 

I used to make the kebab

1kg of lamb .. (easily serves 4 ppl )

3 teaspoons of cayene pepper
3 teaspoons of garlic powder
2 teaspoons of paprika
2 teaspoons of ground pepper
2 teaspoons of oregano
2 teaspoons of salt

Directions:

For two ppl just half everything …

Mix all meat and spices together. Make into loaf shape.. wrap in tin foil and leave overnight

In bottom of slow cooker place 4 balls of tin foil for meat wrapped in tin foil to sit on while cooking

Put in slow cooker in tin foil

Cook for 3-4 hours on high

Or 7 hours on low or about 5 hours for half amount of lamb

Depending on slow cooker.

Next Beef and Broccoli recipe

Beef and Broccoli. Was absolutely delicious 
1.5kg boneless,gravy beef , sliced into thin strips . l sliced it very thin whilst part frozen.

1 cup beef consumme or beef broth

½ cup low sodium soy sauce

4 tablespoons of honey or to your liking

1 tbsp. sesame oil

3 tablespoons shaoxing wine

3 garlic cloves minced & ginger to your preference.

2 tbsp cornstarch mix this with the soy and beef before putting in the slow cooker .

Blanched Broccoli Florets, about 3 cups l blanched them and put them in at the very end

White rice

garnishes spring onion , sesame seeds and coriander
 Enjoy.

Sausages in onion gravy

Ingredients:

•1kg of good sausages
•2 onions thinly sliced
•500ml beef stock
•1-2 tsp crushed garlic
•2 tsp Worcester sauce
•2-3 tsp cornstarch to thicken
•I also added about 1&1/2 tsp of chipotle tabasco but that was a personal preference, I found the original recipe a bit bland so would recommend adding something like that.

Directions:

Brown the sausages in a pan then set aside.
In the slow cooker mix the other ingredients together then place the sausages on top. Cook for approximately 8 hours on low.
When done take sausages out and mix through the cornstarch to thicken gravy then serve. (I finished work late so it ended up in there for 11 hours and was totally fine)

Served with sweet potato mash and kale.

Just in case you’ve never made it before, sweet potato mash –
Peel and cut up potatoes, place in pan of water and bring to the boil. Boil for 25 min then drain. While draining place a generous lump of butter and about 1tsp of crushed garlic (lazy garlic paste/1 clove/ 1tsp garlic powder) salt and pepper to season in the pan and return the potatoes and mash.

On high for next 4 hours then will add broccoli and green beans (they tend to go mushy if in from start I like mine with a bit of a crunch to them!) will post results this evening

mediterranean fashion artichoke and pork

what you need:

1 kilogram stewing pork
4 cloves garlic, chopped
1 onion, diced
1 bay leaf
1 can artichoke hearts, tired and halved
1 can diced tomatoes
1 can tomato sauce
4 cups pork broth
1 tablespoon grapeseed oil
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
half teaspoon floor cumin
in a pot over medium excessive warmness, heat the grapeseed oil and prepare dinner the pork for 2 to a few minutes consistent with facet or until browned. location browned pork in a slow cooker along side garlic, onion and artichoke hearts. stir in bay leaf, pork broth, tomatoes and tomato sauce then season with basil, oregano, parsley and cumin. cowl and prepare dinner on low for 7 hours.

what you want:

1 onion, peeled and halved
half of fresh jalapeno pepper, seeded and chopped
9 cups water
3 cups dry pinto beans, rinsed
2 tablespoons minced garlic
5 teaspoons salt
1 3/4 teaspoons freshly floor black pepper
1/eight teaspoon ground cumin
location onion, jalapeno pepper, pinto beans and garlic in a crock pot. season with salt, black pepper and cumin. upload the water to the pot and stir to combine components well. cover and cook for 8 hours on excessive, adding more water as wished. while prepared, stress pinto beans and reserve the liquid. mash the beans, adding a number of the reserved liquid to obtain favored consistency.

tasty chook adobo

what you need:

1 half of kilogram complete chicken, cut into portions
eight cloves garlic, crushed
1 sweet onion, sliced
three/four cup low sodium soy sauce
half of cup vinegar
mix collectively garlic, onion, soy sauce and vinegar in a bowl. stir to combine elements properly. region chicken portions in a gradual cooker then pour soy sauce mixture all over it. cowl and prepare dinner for 6 to 8 hours on low. satisfactory served over cooked rice.
