Filipino Chicken Adobo (Weight Watcher Friendly). This tasty Filipino Chicken Adobo is super easy and good for Weight Watchers. Tender chicken thighs simmer in a yummy mix of vinegar, soy sauce, garlic, and bay leaves. Slow-cook it for big flavor with few points. Perfect over rice for a cozy family meal anyone can make at home.

Ingredients

  • 8 chicken thighs without bones or skin (total 24 oz). You can use bigger ones, but points are for 24 oz.

  • 2 cups rice vinegar (plain white vinegar works too)

  • 2 cups low-salt soy sauce

  • 2 cups water

  • 6 teaspoons chopped garlic (or 6-8 fresh garlic cloves)

  • 4-6 dried bay leaves

  • Black pepper to taste (fresh ground is best)

Filipino Chicken Adobo: Directions

  1. Put all ingredients in your slow cooker, then add the chicken.

  2. Cook on Low for 5-6 hours or on High for 3-4 hours.

  3. I made mine in a 6-quart (6L) slow cooker.

  4. Serve it hot over rice.

  5. Each thigh is 3 Weight Watcher Points Plus (PP). Rice adds extra points.
