Warm Chicken Caesar Salad. This yummy warm salad mixes juicy chicken, crispy bacon, fresh lettuce, crunchy croutons, and cheesy parmesan with tasty Caesar dressing. Ingredients

2 chicken breast fillets

1 cos lettuce, ripped into pieces

70g shaved parmesan

1 cup croutons

Caesar salad dressing (to taste)

2 eggs

4 rashers streaky bacon cut into thin strips

1 tablespoon olive oil

1 teaspoon dried oregano
-
1 teaspoon dried sage leaves

1 teaspoon onion flakes
-
1 teaspoon garlic salt
-
1 teaspoon dried parsley flakes

2 litres boiling water
-
4 asparagus spears
-
Cracked pepper and extra shaved parmesan for garnish
Warm Chicken Caesar Salad: Instructions
Note: This uses a searing slow cooker. No slow cooker? Just do the “sear” steps on your stove top.

Turn slow cooker to “sear” mode and let it get hot.

Cook bacon (no lid) till crispy. Take it out and put on paper towel to soak up grease.

In a little bowl, stir oregano, sage, onion flakes, garlic salt, and parsley. Rub this mix on chicken breasts, pat it in, and put chicken in the hot slow cooker (it has bacon oil already).

Sear chicken 5 minutes per side (no lid). Then switch to high heat, put lid on, and cook 30 more minutes till done (check size of chicken).

While chicken cooks, toss lettuce, parmesan, croutons, bacon, and Caesar dressing in a big bowl. Mix well.

Take chicken out to rest on a plate.

Wash slow cooker pot, put it back, set to sear. Add water, lid on till boiling. Add asparagus and cook 2 minutes.

While asparagus cooks, cut chicken into small bites. Put asparagus in ice water to cool it fast.

Add 20ml vinegar to that same hot water. Crack eggs into bowls one by one, slip into water, poach 2.5-3 minutes (no lid). Lift out gently with a paper towel.

Pile salad mix on plates with warm chicken. Add poached egg on top. Cross 2 asparagus spears over egg, sprinkle parmesan and pepper.
