GARLIC PARMESAN CHICKEN
Hubby’s new fav! 🙊🙊
INGREDIENTS:
– 1/3 cup extra-virgin olive oil
– 8 chicken thighs
– Salt to taste
– Freshly ground black pepper to taste
– 8 washed baby potatoes, quartered
– 2 tb butter
– 6-8 cloves garlic, crushed
– 6 tb chopped fresh parsley (can use dried)
– 2 tb chopped fresh thyme (can use dried)
– Grated parmesan 125g bag
DIRECTIONS:
In a large skillet over medium-high heat, heat a little bit of your oil. Add chicken, season with salt and pepper on both sides and sear until golden, 3 to 4 minutes, then flip and sear 3 minutes more.
Meanwhile, throw your potatoes into the slow-cooker, toss them with remaining olive oil, butter, garlic, parsley and thyme and season very generously with salt and pepper. Add chicken on top of the potatoes to slow cooker and lightly top the chicken with the remaining parsley, parmesan & garlic.
Cover and cook on high for 3-4 hours or low for 8 hours, until potatoes are tender and chicken is fully cooked.
Serve with steamed veg or as is!
