Ingredients

  • 1 kg chicken thighs (cut into big chunks)

  • 3 mild chorizo sausages

  • 1 red bell pepper, sliced thin

  • 1 green bell pepper, sliced thin

  • 1 yellow bell pepper, sliced thin

  • 2 celery sticks, chopped up

  • 2 big onions, chopped small

  • 4 large mushrooms, sliced

  • About 600 g crushed tomatoes (like one 420 g can plus some extra from the fridge)

  • 500 ml chicken broth

  • Note: These spice amounts are approximate

  • 1 tsp thyme

  • 1 tsp oregano

  • ½ tsp salt

  • 2 bay leaves

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ½ tsp mustard powder

  • ¼ to ½ tsp cayenne pepper

  • ¼ tsp ground black pepper

Gumbo Making Directions

  1. Cook the onions, chicken, and chorizo in a pan until they turn brown (you can skip the chorizo if you want).

  2. Add everything to your slow cooker pot and stir it all up well.

  3. Put on the lid and cook for 4-5 hours on high, or 6-7 hours on low.
