Ingredients

1 kg boneless chicken (thigh fillets are best for slow cooking—they stay so tender!)

1 clove garlic, chopped small

1 small onion, sliced thin

1 can (440g) crushed pineapple with juice (don’t drain it!)

3/4 cup tomato sauce or ketchup

3 tablespoons brown sugar, packed tight

3 tablespoons hoisin sauce

1 teaspoon fresh grated ginger
Island Chicken: Instructions

Put the chicken in your slow cooker.

Mix up all the other stuff in a bowl and pour it over the chicken.

Put the lid on and cook on low for about 6 hours.

If you want thicker sauce, stir in some cornflour before eating.
