Home made slow cooked roasted tomato & basil soup.

Ingredients:

12 tomato’s (quartered)
1 red onion (finely chopped)
3cloves of garlic (finely chopped)
A little salt
A lot of freshly ground black pepper
1 chicken stock pot
1 veg stock pot
1 tablespoon of sugar.
400ml of boiling water.
Handful of fresh Basil leaves and stalks.
A few spoonfuls of double cream (optional and added at the end of cooking).

Method:

Put tomato’s (quartered), red onion (finely chopped), & chopped fresh garlic into baking tray, drizzle with a little oil, season with salt and black pepper.

Roast in oven at 200degrees for 40mins (you can make this without roasting the veg first, but I personally think it brings out more flavour).

Add stock pots and water to slow cooker and mix until the stock pots dissolve, add roasted veg and any fluid in the tray into the pot. Rip up and throw in some fresh basil and add 1 tablespoon of sugar (just to take away any bitterness).

Cook on high for 2-3hours (it doesn’t really matter if it’s longer, it just let’s the tomato’s mush down a bit more lol).

Use a hand blender to blend to a consistency you like, add the cream once blended (optional). And enjoy with crusty bread.

I can’t eat fresh peppers but if you like them I think they would also be a lovely addition to this.
