Slow Cooker Loaded Potato Skins

Slow cooker Loaded potato skins!! 

Recipe:
4 baking spuds (pierced, covered in olive oil, salt and pepper) wrapped on foil 4 hours on high.

Cut them in half, scoop out the middle, pop skins in the oven for a 10 minutes to crisp.

Mix filling with cream cheese, cheddar, bacon, spring onions and spoon back into skins. Topped with mozzarella and chives and back in the oven for a few minutes to melt. 😁

Served on a bed of gourmet spaghetti hoops.😅
Best potato skins I’ve ever had!! Will never be going back to store bought!! 😍

Slow cooker tomato soup 

(Full packs with skin left on)
Plum, cherry, salad (chopped), mixed and tin of chopped tomatoes
4 carrots (chopped)
4 spring onions (chopped)
Basil, parsley, oregano, garlic, Worcestershire sauce, salt and pepper
Table spoon of sugar to take the edge off the acidity
Chili flakes for a zing
2 vegetable stock pots

Cook 4/5 hours on high.

Throw 3 tablespoons of heavy cream and Philadelphia (I used the garlic herb one) in and blend.

Serve up and sprinkled with parmesan and chives along side some homemade bread (pack mix)
