Ingredients

  • 700g skinless chicken thigh fillets
  • 40g BBQ spice rub (McCormick Grill Mates Smokin Texas BBQ Rub works great, but any BBQ spice rub from the spice aisle will do the job)
  • 1 red onion, finely diced
  • 1 tablespoon minced garlic
  • 250ml chicken stock

Texas BBQ Shredded Chicken: Directions

  1. Place the whole, raw chicken fillets into your slow cooker.
  2. Sprinkle the BBQ spice rub over the chicken, then add the diced onion and minced garlic. Mix everything together well so the chicken gets nicely coated.
  3. Pour the chicken stock over the top of the chicken.
  4. Put the lid on and cook on low heat for 4 hours.
  5. Once cooked, shred the chicken using two forks. The chicken will soak up the leftover liquid as you shred it, making it extra juicy and flavorful.
  6. Serve it your favorite way such as on a baked potato, on pizza, on pasta, in a salad, or on a burger. It goes well with just about anything!
