Loaded Spanish Bake. A warm and hearty one-pot dish that brings together tender potatoes, juicy chicken, smoky chorizo, and eggs in a rich tomato sauce. This easy slow cooker meal is full of bold Spanish flavors that the whole family will enjoy any night of the week.

Ingredients
- 5 medium potatoes, washed and cut into thin slices
- 400g can of crushed tomatoes
- 2 teaspoons minced garlic
- 1 teaspoon dried oregano
- 1 red Spanish onion, sliced
- 2 teaspoons chicken stock powder
- 1 large chicken breast (400g)
- 1 chorizo sausage (125g), sliced
- 3 eggs
- Non-stick oil spray
Loaded Spanish Bake: Directions
- Spray the inside of your slow cooker bowl with non-stick oil spray so nothing sticks to the bottom.
- Place all the thin potato slices in a flat layer along the bottom of the slow cooker bowl.
- In a small bowl, mix together the crushed tomatoes, minced garlic, and dried oregano. Pour this mixture over the potato slices.
- Sprinkle the chicken stock powder on top of the tomato layer.
- Spread the sliced onion evenly over the top of the tomato layer.
- Cut the chicken breast in half the long way, then cut each piece into thin strips.
- Lay the chicken strips on top of the onion layer.
- Place the chorizo slices on top of the chicken.
- Put the lid on and cook on HIGH for 5 hours.
- Once done, use a spoon to make 3 small holes across the top of the bake. Crack one egg into each hole.
- Put the lid back on and cook for about 15 more minutes, or until the eggs are fully set.
- Serve hot and enjoy a tasty one-pot meal the whole family will love!
