Ingredients

  • 5 medium potatoes, washed and cut into thin slices
  • 400g can of crushed tomatoes
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 red Spanish onion, sliced
  • 2 teaspoons chicken stock powder
  • 1 large chicken breast (400g)
  • 1 chorizo sausage (125g), sliced
  • 3 eggs
  • Non-stick oil spray

Loaded Spanish Bake: Directions

  1. Spray the inside of your slow cooker bowl with non-stick oil spray so nothing sticks to the bottom.
  2. Place all the thin potato slices in a flat layer along the bottom of the slow cooker bowl.
  3. In a small bowl, mix together the crushed tomatoes, minced garlic, and dried oregano. Pour this mixture over the potato slices.
  4. Sprinkle the chicken stock powder on top of the tomato layer.
  5. Spread the sliced onion evenly over the top of the tomato layer.
  6. Cut the chicken breast in half the long way, then cut each piece into thin strips.
  7. Lay the chicken strips on top of the onion layer.
  8. Place the chorizo slices on top of the chicken.
  9. Put the lid on and cook on HIGH for 5 hours.
  10. Once done, use a spoon to make 3 small holes across the top of the bake. Crack one egg into each hole.
  11. Put the lid back on and cook for about 15 more minutes, or until the eggs are fully set.
  12. Serve hot and enjoy a tasty one-pot meal the whole family will love!
