SLOW COOKER THAI CHICKEN SATAY RECIPE… After a hectic day of housework today, dinner was a nice quick to prepare slow cooker Thai Chicken Satay, served on a bed of steamed rice, with lime wedges 🙂
Serves 4
Ingredients:
6 Chicken thigh fillets (diced)
1 brown onion (sliced)
1/2 cup crunchy peanut butter
1/2 cup medium chunky salsa
2 teaspoons curry powder
2 teaspoons Worcestershire sauce
1/2 medium red pepper diced
1 Tspn crushed garlic
1 Tspn crushed ginger
1/4 Tspn of Paprika
1 tablespoon Soy Sauce
Coconut cream
Crushed peanuts
Directions:
Prepare and put all ingredients in the slow cooker except coconut cream.
Cook on High for 3 hours, low for 1 hour. Prior to serving add a cup of coconut cream then thicken with a little cornflour.
Serve on steamed white rice with Lime wedges
Garnish with thin slices of red pepper and either parsley or coriander and crushed peanuts. ENJOYS..
