Ingredients

  • 500 grams diced chicken

  • 185-gram jar Ayam yellow curry paste

  • 800 ml coconut milk

  • 1 tablespoon fish sauce

  • 1 tablespoon brown sugar

  • 2 large potatoes, peeled and cut into chunks

  • 2 carrots, peeled and sliced

  • 1 onion, halved and sliced

  • 1 teaspoon minced ginger

  • 2 garlic cloves, crushed

Thai Yellow Curry Chicken: Directions

  1. Put the diced chicken into the slow cooker.

  2. Add the potato chunks, sliced carrots, and sliced onion on top of the chicken.

  3. In a bowl, stir together the yellow curry paste, coconut milk, fish sauce, brown sugar, minced ginger, and crushed garlic.

  4. Pour the mixture over the chicken and vegetables. Make sure the sauce covers the potatoes.

  5. Cover the slow cooker and cook on LOW for 4–5 hours, until the chicken and potatoes are tender.

  6. Stir gently before serving. Serve with rice or bread if you like.
