500g chicken thighs

1 red onion, sliced thin

400ml coconut milk from a can

Juice from 1/2 lemon

1 tablespoon tamari

A pinch of salt

1 tablespoon dried thyme

1 teaspoon garlic powder

2 chopped shallots

1/2 cup peas

1 teaspoon olive oil
Thyme for Lemon Chicken Thighs: Directions

Put olive oil in the slow cooker.

Chop chicken thighs into small 2-3 cm pieces. Add them to the cooker.

Slice the red onion and put it in too.

Pour in 400ml coconut milk. Add garlic powder, thyme, and squeeze in juice from 1/2 lemon.

Add tamari and a pinch of salt.

Cook on low heat for 8 hours.

Chop 2 shallots into 1cm pieces and add them. Stir in 1/2 cup peas. Set to warm with lid on for 20 minutes, until peas are soft.
