Ingredients

  • 1/2 kg chicken thighs (cut into pieces)

  • 2 carrots (chopped small)

  • 3 potatoes (cut into chunks)

  • 1 onion (diced up)

  • 1/2 jar Patak’s vindaloo paste

  • 1 cup water

  • 1 tin diced tomatoes

Vindaloo Chicken Curry: Directions

  1. Chop all the chicken, carrots, potatoes, and onion into bite-size pieces. Put them in your slow cooker.

  2. Add the vindaloo paste, water, and diced tomatoes on top. Stir a little.

  3. Cook on low heat for 6 to 8 hours until everything is soft.

  4. Turn to high for the last hour to make the sauce thick and yummy.

  5. Serve hot with rice and crispy poppadums.
