TBeef and Beer Casserole made with beer, beef stock, garlic, herbs, and gravy powder. A rich and comforting beef dish cooked low and slow until perfectly soft.
Beef and Beer Casserole: Ingredients

600g diced beef

1x carrot peeled and chopped (should you want to make this a pie then it is better to grate it)

2-3 small mushrooms diced

1 medium brown onion peeled and cut into dice.

1/2 cup corn flour

4tbs tomato sauce
-
2tbs Worcestershire sauce

1x cup of beer
-
2x cups of beef stock
-
1tsp thyme
-
1tsp parsley
-
3tsp minced garlic
-
2x bay leaves
-
Salt and pepper
-
2tbs oil
-
Your favourite gravy powder (I use Gravox Brown Onion gravy)
Instructions
Cooking the Beef
Rub beef with corn flour and cook in batches in a saute pan with a small amount of oil. You just want to brown the beef a little.
Slow Cooker Method
Put all ingredients in your slow cooker and cook on low for 6-8 hours or until beef is actually soft.
Thickening the Sauce
When the beef is almost cooked, add gravy powder to thicken the sauce. Add 3tsps gravy powder and combine that with 3tbs water and pour into your slow cooker stir well and continue this process until you are pleased with the consistency of your sauce.
Serving the Dish
When you have the bay leaves removed from your slow cooker then your dish is ready to serve. I prefer mine with a fine potato mash.
Notes
Although you may not be a beer lover (as I am not), you will not dislike this food. The flavour of the beer is quite faint and it makes your beef even tender. Preferably pick up a beer that you can enjoy the taste of should you be able. I use either Cascade Draught or Pure Blonde.
