Ingredients

  • 2 tablespoons soy sauce

  • 1/2 teaspoon dried rosemary

  • 2 teaspoons honey

  • 1-2 cloves crushed garlic

  • salt and pepper to taste

  • Extra water (where necessary) (see note).

  • 1-2 lamb racks (franked/trimmed or untrimmed is okay), approximately 600 grams-1.2 kilos.

Lamb Rack Rosemary Soy Garlic: Instructions

  1. Combine the bottom of the slow cooker with the soy sauce, rosemary, honey, garlic, salt and pepper.

  2. Add lamb and sauté in the marinade.

  3. Bake with LOW cook on 5-6 hours with 1 or 2 turns or spooning of the marinade.

  4. Monitor the liquid used in checking the level of liquid to determine whether you need to add a dash of water to avoid burning of the marinade.

  5. Take out of slow cooker, place in 180C oven until crisp (20min).

  6. In the meantime strain, and skim off the fat, and serve as a jus to the lamb.

Note

Note: I prepared this in a low cooker with a narrow fitting lid that cooks slowly. With a fast cooking slow cooker or high evaporation, you should watch out for the marinade because it may burn out, so you might need an addition of a drop of water.
