2 celery sticks, sliced thick

1 – 1.5 cups sweet potato, cut in big chunks
-
1/4 cup regular flour
-
2 tsp beef stock powder (dry kind)
-
2 tsp cracked black pepper
-
2 Tbsp gravy powder (I pick rich meat kind)
-
1.5 cups tomato passata (check notes)
-
1/2 cup red wine (I use no-alcohol shiraz)
-
1 Tbsp chopped garlic from a jar
-
Use 2 tablespoons of fresh chopped parsley, or 2 teaspoons if it is dried.
-
4 fresh rosemary sprigs
-
3 bay leaves
-
Corn flour mix to make it thicker (2 Tbsp corn flour + 1 Tbsp water)
-
Optional: More fresh parsley to sprinkle on top
Osso Bucco: Directions
-
Put chopped onion, carrot, celery, and sweet potato chunks in your slow cooker.
-
In a big plastic bag, mix flour, beef stock powder, gravy powder, and pepper.
-
Toss the beef pieces in the bag to cover them with the flour mix.
-
Place the coated beef on top of the veggies in the slow cooker.
-
Mix tomato passata, red wine, and garlic together, then pour it over everything.
-
Sprinkle on fresh parsley, bay leaves, and rosemary sprigs.
-
Cook on high for 2.5 hours, then switch to low for 4.5 hours.
-
Halfway through, gently flip the meat pieces.
-
Or just cook on low for 9 hours total.
-
When done, take out and throw away bay leaves and rosemary. Skim off any fat on top.
-
Move meat and veggies to a covered plate to stay warm.
-
Pour cooking juices into a pot. Add corn flour mix and stir over high heat for about 5 minutes until thick.
-
Put veggies in bowls, add Osso Bucco on top, and pour sauce over.
-
Add extra parsley to make it pretty!
Notes
I used 3 big Osso Bucco slices, but change it for your family.
No passata? Use crushed tomatoes instead (passata tastes best).
I pick no-alcohol wine, but any red wine you like works.
Skip thickening if you want thin sauce.
I made this in a 6L slow cooker.
