5 chicken thigh fillets without skin

200ml of your best BBQ or rib sauce

10 small pizza bases (try bruschetta slices from the bread area)

1/2 big red onion, cut in thin pieces

50g baby spinach, cut thin

1 cup shredded cheese (cheddar or mozzarella)

Put raw chicken and sauce in your slow cooker.

I used a small 1.5L cooker on low for 4 hours, until chicken shreds easy. (It might cook quicker in a bigger one.)

Use a spoon with holes to take out chicken. Shred it up and throw away the liquid.

Keep shredded chicken in the fridge till pizza time. Perfect for getting meals ready ahead!
Pizza assembly

Heat oven to 180 degrees. Put pizza bases on a tray with baking paper.

Spread lots of pizza sauce on bases. Add shredded chicken, onion, and spinach.

Sprinkle a little cheese on top, then add dried oregano.

Bake in hot oven about 15 minutes, until warm and cheese melts.
