Ingredients

2 Tbsp sweet chilli sauce

1 Tbsp ginger

1 tsp coriander

1 Tbsp garlic

1 Tbsp fish sauce

1 cup crunchy peanut butter

400ml coconut cream

500g frozen stir fry veg

500g diced beef

1 Tbsp sugar

2 Tbsp soy sauce

1 spring onion sliced

Salt and pepper to taste
Peanut Satay: Directions

Put everything except the veggies in the slow cooker. Set it on low for 4-5 hours, until the meat gets soft and tender.

Add the veggies and cook on low for one more hour.

Serve it over your favorite rice or egg noodles.

This makes a mild satay. For more zing, swap sweet chilli sauce for real hot chilli.
