Lemon Butter Chicken. This easy slow cooker chicken recipe makes the most amazing creamy lemon butter sauce you will ever taste. Tender chicken thighs cook low and slow in a rich, cheesy, garlicky sauce that will make your whole family ask for seconds. Serve it over rice for a complete meal.

Ingredients
- 8 chicken thighs (with or without skin)
- 1 tablespoon smoked paprika
- Salt and black pepper to taste
- 3 tablespoons butter, divided
- 3 cloves garlic, minced (or 2 teaspoons minced garlic)
- 1 cup chicken stock
- 1/2 cup heavy cream
- 1/4 cup freshly grated Parmesan cheese
- Juice of 1 lemon
- 1 teaspoon dried thyme
- 2 cups baby spinach, chopped
- Optional: 1 cup mushrooms, finely chopped
Lemon Butter Chicken: Directions
- Sprinkle the chicken thighs with smoked paprika, salt, and black pepper on both sides.
- Heat 2 tablespoons of butter in a frying pan and cook the chicken thighs for 2 to 3 minutes on each side until they are nicely browned.
- Place the browned chicken thighs in a single layer at the bottom of your slow cooker. A 6.5 litre slow cooker works best so the chicken is not stacked on top of each other.
- Using the same frying pan, melt the remaining butter. Add the cream, garlic, lemon juice, Parmesan cheese, thyme, and chicken stock. Stir everything together and let it cook gently for 2 to 3 minutes.
- Pour the creamy sauce all over the chicken in the slow cooker.
- Put the lid on and cook on low for 5 hours.
- Add the mushrooms and chopped spinach, put the lid back on, and cook for one more hour on low.
- Serve hot over rice or with your favourite sides.
Notes
If you really love lemon flavor, try using the juice of one and a half or even two lemons. You can also use a little less garlic if you prefer a milder taste.
