Lemon Butter Chicken

Lemon Butter Chicken. This easy slow cooker chicken recipe makes the most amazing creamy lemon butter sauce you will ever taste. Tender chicken thighs cook low and slow in a rich, cheesy, garlicky sauce that will make your whole family ask for seconds. Serve it over rice for a complete meal.

Ingredients

  • 8 chicken thighs (with or without skin)
  • 1 tablespoon smoked paprika
  • Salt and black pepper to taste
  • 3 tablespoons butter, divided
  • 3 cloves garlic, minced (or 2 teaspoons minced garlic)
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese
  • Juice of 1 lemon
  • 1 teaspoon dried thyme
  • 2 cups baby spinach, chopped
  • Optional: 1 cup mushrooms, finely chopped

Lemon Butter Chicken: Directions

  1. Sprinkle the chicken thighs with smoked paprika, salt, and black pepper on both sides.
  2. Heat 2 tablespoons of butter in a frying pan and cook the chicken thighs for 2 to 3 minutes on each side until they are nicely browned.
  3. Place the browned chicken thighs in a single layer at the bottom of your slow cooker. A 6.5 litre slow cooker works best so the chicken is not stacked on top of each other.
  4. Using the same frying pan, melt the remaining butter. Add the cream, garlic, lemon juice, Parmesan cheese, thyme, and chicken stock. Stir everything together and let it cook gently for 2 to 3 minutes.
  5. Pour the creamy sauce all over the chicken in the slow cooker.
  6. Put the lid on and cook on low for 5 hours.
  7. Add the mushrooms and chopped spinach, put the lid back on, and cook for one more hour on low.
  8. Serve hot over rice or with your favourite sides.

Notes

If you really love lemon flavor, try using the juice of one and a half or even two lemons. You can also use a little less garlic if you prefer a milder taste.
