Low Carb Italian Meatballs

 Low Carb Italian Meatballs 
Family friendly, can be done in oven or crock pot!

Ingredients:

– 1 lb ground beef (can do half pork if you want)
– 1/4 fresh parmesan cheese (can use the simple shaker style if you’re in a hurry)
– salt, to taste
– 1/4 chopped or minced onion
– 1 egg
– 1 clove garlic, minced
– Italian seasoning, I use like a tablespoon
– 1/4 cup heavy whipping cream
– pepper, to taste
– 1 cup pork rind breadcrumbs. You can buy them or just crush up your own!

Directions:

– I add the egg to a bowl and beat it then add the meat and all other ingredients!
– mix it together with a spoon or your hands until combined.
– roll into meatballs! I prefer mine smaller, but you can make them whatever size you like.
– I bake them at 400 for 20-30mins depending on size.
– or you can throw them in the crockpot with some sauce and let them cook on low all day!
– I use Rao’s sauce since it’s low carb and just eat meatballs or eat over spaghetti squash or zoodles! I make pasta for the hubby and kiddo.
