Lamb Casserole

This lamb casserole is warm and filling. It cooks slowly and becomes very tender. The vegetables and sauce make it rich and tasty. It is perfect for a family meal.

Ingredients

  • 1 Leg of lamb

  • 4 peeled and chopped carrots

  • 5 medium peeled and chopped potatoes.

  • 1 cup of frozen peas

  • 1 cup of frozen chopped onion

  • 250mls of chicken stock

  • 1 can of chopped tomatoes

  • 1 can of cream of mushroom, condensed.

  • 1 pkg French onion soup mix (dry)

  • Splash of mixed herbs

  • Salt & pepper to taste

  • Corn flour (2 tablespoons), required to thicken.

  • Mash potato to serve

Lamb Casserole: Instructions

Cook the Casserole

Put all the ingredients in slow cooker on low, leave it for 8 hours.

Prepare Thickening

Thickening, where necessary, 30 minutes before serving, prepare 2 tablespoons cornflour with 2 tablespoons of cold tap water and stir until a smooth paste and add to lamb casserole.

Cook Again

Turn lamb casserole on high and leave it for another 30 minutes.

Serve

Serve on a bed of mash potato
