Ingredients

  • 2 chicken breasts (no skin)

  • 1 tbsp olive oil or coconut oil

  • 1 lemon (squeeze juice and grate peel)

  • Salt and black pepper (to taste)

  • A small bit of butter

  • 1 small onion (chop fine)

  • 1 chili (no seeds, chop fine)

  • 2 tsp curry powder

  • 2 tbsp tomato paste

  • 100 ml white wine (dry kind)

  • 100 ml chicken broth

  • 1 tbsp apricot jam

  • 150 ml mayo

  • 75 ml sour cream

  • 1 big mango (peel, cut up)

  • 2 tbsp fresh cilantro (chopped) or dried

  • Dash of Tabasco (if you like heat)

  • 50g flaked almonds (toast in dry pan)

  • 1 heaped tsp cornstarch (mix with water)

Coronation Chicken: Instructions

  1. Put everything in slow cooker, except mango. Add cornstarch mix to keep cream smooth.

  2. Stir well.

  3. Cook on low for 4 hours. Stir 1-2 times.

  4. Add mango for the last 20 minutes to warm up.

  5. Top with almonds and cilantro. Serve with rice and salad. So tasty!
