Ingredients

  • 500g chopped beef

  • 1 chopped carrot

  • 1 chopped onion

  • 2 tablespoons chopped garlic

  • 1 can (270ml) coconut cream

  • 2 tablespoons beef stock powder

  • 1 tablespoon brown sugar

  • 3 tablespoons curry powder (see notes below)

  • 1 can (400g) chopped tomatoes

  • 3 cups chopped spinach

To Finish

  • 300ml cream mixed with 2 tablespoons cornflour (stir it smooth)

Beef Curry with Spinach: Directions

  1. Put all ingredients (except the cream-cornflour mix) in your slow cooker.

  2. Cook on low heat for 6 hours.

  3. Stir in the cream-cornflour mix.

  4. Cook for 1 more hour.

  5. Serve hot on fluffy rice! 😋🍚

Notes

Change the curry amount to make it just right for your taste. I began with 1 tablespoon of curry powder and added more bit by bit until it was spicy enough. 😊 The cream at the end makes it softer and super creamy!
