Ingredients

  • 1 kg chicken thigh fillets (raw, keep them whole)

  • 2 tsp curry powder (check notes—I like Keen’s brand)

  • 1 onion, chopped up

  • 1 small jar (320g) Rosella fruit chutney

Chutney Chicken Curry Making Steps

  1. Put the chicken in the slow cooker. Add chopped onion on top.

  2. Shake on the curry powder (see notes below).

  3. Spoon the chutney over everything. Stir it all up to mix.

  4. Cook on low for 5 hours.

  5. Shred the chicken with forks to serve.

Extra Tips
It looks like lots of juice at the end, but shred the chicken into it and it soaks right up.
This curry is nice and gentle. For tiny kids, try just 1 tsp curry powder so it’s less strong.
