Chunky Beef Chilli. This hearty chunky beef chilli simmers tender beef cubes with spicy chipotle peppers, smoky paprika, and cumin in a slow cooker for hours. Pinto beans and tomatoes make it thick and yummy. Serve in fun tortilla bowls! Super easy—brown meat, dump everything in, and let it cook low and slow for big flavour.

Ingredients

  • 1 kg beef stewing steak, cut into cubes

  • 1 tbsp olive oil

  • 2 tsp plain flour, mixed with salt and pepper

  • 2 red onions, chopped up

  • 2 tsp cumin

  • 2 tsp smoked paprika

  • 2 tsp cayenne pepper

  • 4 tsp hot chipotle chilli paste

  • 2 dried chipotle chillies

  • 2 tins pinto beans

  • 2 tins chopped tomatoes

  • 4 tbsp tomato puree

  • 1 jar red jalapenos

  • 1 Knorr rich beef stock pot

Chunky Beef Chilli: Directions

  1. Put the beef cubes in the flour mix with salt and pepper. Heat olive oil in a pan and cook the beef until brown.

  2. Put the browned beef in the slow cooker with all other ingredients.

  3. Set it to low and cook for 8 hours.

Optional tip: Add 3 diced peppers (capsicums) one hour before it’s done.*
The tortilla bowl is just a tortilla baked in a metal mold.
