Ingredients

  • 2 cups chunky frozen vegetable mix (carrots, cauliflower, beans)

  • 1 cup chunky diced sweet potato

  • 2 cups broccoli florets

  • 1/2 cup frozen peas and corn

  • 200 g diced bacon

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • 250 ml cream

  • 2 tsp cornflour

  • 3/4 cup grated tasty or cheddar cheese

Cheese & Bacon Vegetable Bake: Directions

  1. Put all the vegetables and the diced bacon into the slow cooker. Toss them together so they mix well.

  2. In a bowl, whisk the garlic powder, a little salt and pepper, the cream, and the cornflour until smooth.

  3. Pour the smooth, creamy sauce over the vegetables and bacon in the slow cooker.

  4. Cook on high for 2 hours, then switch to low and cook for another 2 hours.

  5. In the last 15 minutes of cooking, sprinkle the grated cheese over the top so it melts and becomes golden.
