Chilled Lemon Rice Pudding forMonday dessert 3hrs in slow cooker too easy
today was a chilled day as was the way I served this classic underrated pudding.
Ingredients:
110 gram (4 oz) pudding rice
25 gram (1 oz) granulated sugar
25 gram lemon curd.
5 ml of lemon juice
1.2L (2 pt) milk
ground cinnamon optional
Method:
STEP 1
add the milk sugar and pudding rice to the slow cooker. mix well and place on high for 3hrs
step 2
stir after 1 5 hrs
step 3
when cooked stir in the lemon juice and lemon curd and fill your dessert glasses. place in the fridge until cold if you like it hot serve straight away.
to serve
I mixed Greek yoghurt and 5ml of lemon juice with a little lemon curd. spooned over the cold rice topped with cream and dusted with cinnamon.
