Sweet and Sour Chicken

Ingredients:

For the sauce

1 can pineapple chunks or pieces in juice
1 cup julienne cut carrots
1 medium onion, chopped (1/2 cup)
3 cloves garlic, finely chopped
1 teaspoon finely crushed ginger
1/2 cup soy sauce
1/2 cup brown sugar
1 medium red capsicum cut into 1-inch pieces
1 medium green capsicum cut into 1-inch pieces
4 teaspoons cornflour
1/4 cup water
2 teaspoons sesame seed

Hot cooked rice

Steps for the chicken

2 large chicken breasts cut into chunks
salt + pepper (to taste)
½ cup corn flour
2 large eggs (beaten )
Sesame oil

Directions:

In a large glass bowl place cut chicken breasts
Season, add beaten eggs and cornflour and mix by hand.
Heat frying pan with some sesame oil
Fry chicken off until golden in colour
Drain pineapple, reserving juice. Place pineapple chunks in small bowl, refrigerate and cover..
Place carrots, onion, garlic and ginger into slow cooker. Top with chicken. Mix brown sugar, soy sauce and reserved pineapple juice, put over chicken.
Cover and cook on low heat setting 7 to 8 hours or approx. 4 hours on high.
During last 30 minutes, add pineapple, capsicum and sesame seeds. Mix cornflour and water, stir into chicken mixture during last 10 minutes of cooking.
Serve with rice.

2ND Stuffed cabbage, capsicum and onion in the slow cooker Recipe

Ingredients are approximate:
Filing
1kg mince meat
1/2 cup rice
1 potato shredded
1 carrot shredded
Brown onion chopped

Method:
Combine the meat, onion and carrot in a pan over the stove, salt and pepper to taste. When the meat becomes watery add the rice, cook for approximately 5 minutes the add the potato and cook for another five minutes. Stir to make sure the potato and rice don’t stick to the pan. Allow filing to cool.

Capsicum: cut off top and fill
Onion: peel skin and place in boiling water for about 4 minutes then place on cold water to make it easier to take apart. Fill
Cabbage: pickled cabbage (can buy from a European shop), add filling and roll.

Place everything and top with your favourite sauce ( I used Ajvar bought from European store) or you can use paprika spice. Mix water with flour and add. Cook on low for approximately 6 hours.
