BBQ pulled pork

BBQ pulled pork with cous cous and homemade apple coleslaw  one of the family’s fave dishes and goes sooo far!

Ingredients:

Around 1.5 kg pork shoulder
230ml BBQ sauce of your choice
120ml of apple cider vinegar
50g light brown sugar
1 tbsp American yellow mustard
1 tbsp Worcestershire sauce
1 tbsp chilli powder (You cannot taste heat at all,it’s for flavour)
1 extra large onion or 3 little ones lol
2 garlic cloves,crushed

Directions:

Place the pork shoulder into the sc;pour in the BBQ sauce,apple cider vinegar & chicken stock. Stir in the brown sugar,mustard,Worcestershire sauce,chilli powder,onion & garlic. Cover and cook on High for around 8 hrs. Remove pork from sc and remove the fat. Also you may want to remove a couple of cupfuls of the liquid from the sc(preferance,I like mine quite dry).

Return pork to sc and shred with 3 forks & stir well. Replace lid askew on the sc and cook for a further 1-2 hrs. Serve however you like!  For the coleslaw:250g shredded white cabbage,2 grated carrots,1 large red onion:finely sliced,1 tsp lemon juice,1 apple:cored & finely sliced,3 tbsp extra light mayonnaise & 4 tbsp fat free natural yoghurt. Mix to combine all ingredients well.

Member ask… Now that looks amazing and I could probably get everyone to eat it.

 Thankyou. It’s one of the main meals that go down a storm in my house. Sometimes I serve it in pittas instead of having cous cous. But always have the coleslaw as it really compliments the pork. There’s always loads left too so find myself eating it again the next day for lunch in a burger bun with melted cheese on top. Cant resist!
